Build-a-Bowl: Vitaliz Style!
The quinoa bowls at Vitaliz Café have been a popular lunch menu item for many Roseville associates. While we are not currently able to enjoy them on campus at Vitaliz Café together, we wanted to share the general recipe for Vitaliz Café Bowls for anyone who would like to try making them at home.
By combining your favorite grains, legumes, veggies and toppings all to your taste, you can build your own Vitaliz Café Bowl for your lunches next week. Don’t forget to pick up ingredients for the special secret sauce – yes, it’s in the recipe!
Vitaliz Café Bowls

1. Start with cooked grains as a base: Quinoa, steamed rice, farro, millet, amaranth or couscous. Follow cooking instructions. 2. Add cooked legumes: Lentils, chickpeas (garbanzo beans), black beans, red beans, peas, fava beans or other legumes that you really enjoy. Follow cooking instructions. 3. Next layer your favorite veggies: bell peppers, squash, kale, spinach, cabbage, avocado, zucchini, onions, broccoli, spinach, green onions, tomatoes, cucumbers, Swiss chard, string beans, cauliflower, and so on. Steam, roast, grill or bake your veggies for more depth of flavor. 4. Top with: tofu, tempeh, toasted pumpkin, sunflower, hemp, chia or sesame seeds, and nuts or other favorite toppings. 5. And of course drizzle with your ‘secret sauce’: Tahini sauce, fresh squeezed lemon juice and olive oil (sparingly), or your favorite vinaigrettes or dressings.
